I think that the main challenge of data modelling involves the definition of a good model, which is not an easy task. In my previous article: https://towardsdatascience.com/italian-covid-19-analysis-with-python-1bdb0e64d5ac, I tried to model the COVID-19 problem through a linear model, but it seems to not work properly. If an outbreak (e.g. a sudden event) occurred, the model would not be able to recognize it. You should use another model, such as those employed in the finance sector, to predict changes in prices trendline. Unfortunately, in this field I'm not expert, but you could google and get some information about that.
